Associate Professor Alison Coates is a Registered Nutritionist in the School of Health Sciences at the University of South Australia in Adelaide and President-Elect of the Nutrition Society of Australia. Her research focuses on dietary strategies to improve cardiovascular and metabolic health, weight and cognitive function with a specific focus on bioactive nutrients in foods and altered timing of eating. She is currently working on studies with nuts in children and adults focused on a wide range of health outcomes.
Kimber Stanhope, RD PhD
Dr. Kimber Stanhope is Research Nutritional Biologist in the Department of Molecular Biosciences, University of California Davis, and a nationally/internationally recognized expert on the health effects of added sugar consumption. She is currently conducting her 5th NIH-awarded clinical study, which includes a recently funded investigation comparing the consumption of sucrose-sweetened beverages and naturally-sweetened orange juice on metabolic processes involved in the development of cardiometabolic disease. She has authored/coauthored over 40 research reports and reviews on the topic of sugar consumption. She has made over 50 presentations at state/national/international conferences and summits and has participated in more than 100 interviews, which included appearances on CBS 60 Minutes and CBC 5th Estate.
Amy Bader, ND
Amy Bader ND is a doctor, teacher, speaker, writer and entrepreneur. She is a graduate of the University of California at Berkeley as well as the National University of Natural Medicine, where she is now an adjunct clinical faculty member. She has private practices in Northern California and Portland, Oregon, where she lives with her beautiful daughter.
She has a passion for treating patients with chronic diseases using clinical nutrition, botanical medicine, Biotherapeutic Drainage, and homeopathy. She has a particular interest in working with patients who want to lose weight and feel comfortable in their bodies.
Dr. Bader has been interviewed as an expert in natural medicine and natural healthcare for radio, newspapers, magazines and television. Roberta Holt, PhD
Roberta R Holt is an Assistant Project Scientist in the Department of Nutrition. Her current research interests include defining the metabolic and physiologic effects of the intake of specific foods on cardiovascular health. This includes examining the relationship between circulating metabolites on vascular and platelet responses. Of interest, as a better definition of the mode of action of how specific phytochemicals and foods affect physiologic response, will lead towards the refinement of dietary recommendations for the general public regarding foods and dietary patterns that reduce chronic disease development. Dr. Holt has over 25 years of experience at the University of California, Davis in the fields of cardiovascular physiology and nutrition, where she received her Bachelors in Physiology and her doctorate in Nutritional Biology. She was a recipient of the UC Davis’ Max Kleiber Award for her dissertational work in the fields of physiology, biochemistry and nutrition, as well as a USDA AFRI NIFA Postdoctoral Fellowship recipient. Her current research projects include the effects of freeze dried strawberry powder intake on microvascular function and its relationship to changes in the microbiome and circulating metabolites; the effects of extra virgin olive oil-derived phenolics on platelet reactivity; and the effects of walnut derived fatty acid metabolites on microvascular function and platelet aggregation.
Francene Steinberg, RD Phd
Dr. Francene Steinberg is a Professor of Nutrition and Chair of the Department of Nutrition at the University of California, Davis. She is a Registered Dietitian Nutritionist and directs the Didactic Program in Dietetics at UC Davis. Dr. Steinberg’s research program focuses on foods, food components and food choices which impact health outcomes. She has over 20 years of research expertise in conducting human randomized clinical trials to study endothelial function, inflammation, markers of lipid and lipoprotein metabolism, and metabolic homeostasis. Her particular areas of interest are the physiologic effects of bioactive food components on health, including skin health, and on decreasing chronic disease risk markers.
Seanna Tully, LAc MSTOM Dipl. OM
Seanna Tully, MSTOM, L.Ac., Dipl OM, RH(AHG) is an acupuncturist, clinical herbalist and professor of East/West Nutrition at Pacific College of Oriental Medicine. Her passion for nutrition and herbal medicine began early in life due to a chronic illness that ended her dance career. She is a peer-reviewed professional member of the American Herbalist guild, a board certified Chinese herbalist and has worked in health care for over 20 years. She has presented at Midwest Women's Herbal conference, the American Herbalist Guild conference, Integrative medicine for the Underserved conference and numerous other venues in the Chicagoland area. She looks forward to completing her doctorate of Chinese medicine in August 2019 and her Diplomate in Chinese medicine dermatology in November 2019. She practices at Aligned Modern Health in Evanston and enjoys kayaking, dancing and field plant identification in her free time.

Dr. Trevor Cates is a licensed Naturopathic Physician. Dr. Cates is passionate about helping others to live balanced and fulfilled lives. For the past thirteen years, she has been educating individuals and groups on how to take control of their health and wellness and do so in a safe and natural way. Dr. Cates is a nationally recognized leader as she was the first woman naturopathic doctor to be licensed in the state of California and holds an additional license in Utah. She finds it more necessary than ever to properly educate others in a world with overwhelming contradictions regarding health and wellness.
Rajani Katta, MD
Dr. Rajani Katta is a board-certified dermatologist, the author of seven books, and a member of the clinical faculty of both the Baylor College of Medicine and the McGovern Medical School. She is the author of numerous medical journal articles on the link between skin and diet and allergic reactions of the skin. Her latest book, Glow: The Dermatologist's Guide to a Whole Foods Younger Skin Diet, provides an evidence-based and practical approach to eating for younger skin. John E. Lewis, PhD
John E. Lewis, Ph.D. is the original founder and current executive of Nurish.Me (www.nurish.me). He is also a past full-time associate professor in the Department of Psychiatry and Behavioral Sciences at the University of Miami Miller School of Medicine and now remains as a voluntary associate professor. He is a diplomate, faculty member, and advisor of the Medical Wellness Association. Dr. Lewis has been the principal investigator of multiple nutrition, dietary supplement, exercise training, and medical device studies in the last 2 decades. Much of his research has included investigating the effects of interventions on a wide variety of outcomes, including immune and cognitive functioning, inflammation, physical fitness, nutrient status, quality of life, and mental health, in healthy adults and in those with Alzheimer’s, HIV, MS, non-alcoholic fatty liver disease, diabetes, chronic pain, and GI disorders, among others. In addition to his professional accomplishments, he is a former athlete and competitive body builder, who maintains a very rigorous exercise training regimen and has eaten a whole-food, plant-based diet for over 22 years.
