Ingredients
1 small bag of charcoal
Lighter fluid
1 zucchini, large pieces
4 ounces, (4-6 mushrooms) white mushrooms
2 red bell peppers, large pieces
2 cups broccoli crowns
¾ c sauce of your choice
6 skewer sticks, *soaked for 10 minutes if wooden skewers
Instructions
1. To heat grill: Stack a hill of charcoal in the middle of the grill. You want enough charcoal so that after it’s hot you can lay it as a flat even layer of coals across the bottom of the grill. That way the heat is even on the grill. Lightly soak charcoal with lighter fluid and let sit for 10 minutes. Spray again with lighter fluid before lighting, let burn until flames go out. Allow coals to turn white before spreading evenly across the bottom.
2. While coals are heating up, assemble the skewers. Place pieces of veggies on skewers however you’d like. Make sure to keep some space in between each vegetable to allow better airflow during cooking.
3. Once the coals are ready place skewers on the grill perpendicular to the grill lines, so
that the vegetables get grill marks, and don’t have a chance to fall through. Cook 8-10 minutes with the lid on flipping halfway through.
4. Remove from the grill and place on a platter. Using a brush, coat the vegetables with your favorite sauce. Serve warm.
